The homemade thick noodle, which is made with premium wheat flour at Mita Noodle Company, is decently served in generous portion. The tamago is soft on the outside with smoky runny yolk, whereas the Char Siu pork is too tough and chewy. The dipping is this super thick broth overloaded with collagen, made with great amount of pork bone, chicken bone and infused with fish or seafood. It is no doubt that it has been boiled for over 12 hours. And I would highly suggest you to finish the noodle as soon as the broth starts to get cold.
