Tosca – Operatic Fine Dining

A breath-taking view, spectacular water fountain and the luxurious chandeliers, there is nothing better than to lunch at Tosca. It’s not the opera, but a note-worthy Michelin Star Italian restaurant set at The Ritz Carlton 5-star hotel. The setting is dramatic and comforting with a busy open kitchen and spaced apart velvet seatings. Staff serves upon a bread basket with a range of rolls, including crispy parmesan cheese flatbread, black olive brioche, herbs bun and sourdough toast. To begin, the sea tiramisu with red prawn carpaccio and seafood foam will easily satisfy a seafood lover, whereas the langoustine is paired with fresh salad leaves and creamy crab mayo, plated wonderfully like a piece of art.

The spaghetti “alla chitarra” is so lovely-looking, wrapped with swordfish, topped with baby squid and a drizzle of black olive oil. The langoustine tortellini, on the other hand, is delicately made one piece with flavorful bisque-like sauce.

While the first two courses are too beautiful to dig in, the following fatty roasted pork belly and a Milanese nera coated turbo are lacking a tad of wow-factor, yet both are made flaky and tender.

Before reaching the end of the 4-course meal, we make sure to save room for desserts. Favourite is the textures of chocolate by Tosca with passion fruit, creamy mousse, mini lava cake, sorbet and a lemon curd-gold flakes combo slice; all teamed to form this intensive chocolate opera. An aesthetic plating of deconstructed cheesecake is also interesting with cherry tomato jelly, sweet rhubarb and bay leaf ice cream. Finally, this sophisticated lunch is ended with a selection of petit fours, including chocolate squares and icing-coated tangerine cakes from the Chef.
