A trip to Macau should always include Chinese most esteemed cuisine, Cantonese dim sum. Arriving at Michelin-starred Jade Dragon, you’ll be taken through a lengthy corridor from reception to dining room, which is set with shades of traditional European design, an open barbecue kitchen and finally the elegant dining room. As we are put with welcome teas and table brewed Chinese tea, the spacious area of soft furnitures and breath-taking dragon theme is particularly enjoyable.
The early lunch starts with daily amuse bouche. Prepared very delicately, the quail thousand year egg impresses the most.
Unlike your ordinary xiao long bao, Jade Dragon’s version is steamed individually in their bamboo steamer, filled with fairly sweet Kagani crabmeat, served with a touch of black vinegar to give the best satisfaction.
Prawn dumpling, which is named after the restaurant and decorated with edible gold, presents an eye-catching green colour from spinach jus. From the skin to filling, I will refer it as a luxurious Ha Gou.
Given their roasted meat are made in their house lychee wood oven, the signature barbecued Iberico pork has demonstrated another remarkable skill. Prime cut to perfect thickness and fat-to-meat ratio, with classic honey and smoky characters, it is a dish to chase after fluffy steamed rice.
Chef has also shown great creativity in the last highlight of the meal; two mini sorbet cones and a platter of mini desserts are served as a petit four.
This is certainly an out of boundary experience with classic, quality and sophisticated dim sum.
