Lately, they are collaborating with talented pastry chef from Butter Crumbs Bakery in serving a pop up tea party, that includes unlimited refill tea to pair with finger licking pastries and simple savouries.
The Spring party begins with a theme of “Pastel Colour” as an appreciation for the breezy and stressless weekend.
Mini crackers topped with smoked salmon and emmental cheese, mini meringues and flower pastel shortbread cookies, the chocolate fudge brownie is frosted with a delightful cream cheese swirl as a less heavy yet beautiful touch.
The vanilla eclair is one of my favourites. Dipped with colourful pink icing and a touch of spring, the choux pastry is made excellent in texture and filled with amazingly creamy custard where you can spot a notable among of vanilla seed.
An astonishing pavlova tower follows with layers of egg white meringue, sweetened whipped cream, berry compote and assorted berries. It is absolutely perfect because it has a chewy and soft center but a uniform crisp surface, almost resembles a big marshmallow.
To top up, we are surprised by the show stopping matcha mousse. Beautifully plated with chocolate tuile, edible flowers and thick matcha sauce, it shows a delicate balance of sweet and bitter, pronounced by good quality matcha.
